Native to tropical West Africa from Senegal to Cameroon, the Ackee is perhaps best known from the Island of Jamaica, where it is widely cultivated for its edible fruits that are part of the national dish. Plants are easily grown from the large, shiny black seeds, fast growing and begin fruiting after only four years. Blighia sapida also makes a very attractive and robust ornamental. The white, fatty aril attached to the seed is edible when ripe, i.e. when harvested from fruits that have opened naturally. The aril must be carefully cleaned of any membranes of the red shell as these are poisonous like the other parts of the tree. They are prepared in various ways but we find them absolutely irresistable when slowly roasted in a little butter until nearly crispy.
